Oven Baked Fish for Your Main Course
“What’s cooking?” is a question many families face daily. Some families don’t even discuss the topic because the cupboards are bare.
Food pantries provide families in need with items. However, there are times the family doesn’t know what to do with the free groceries delivered.
Annunciation’s St. Vincent de-Paul Food Pantry provides food to those needing assistance in the area, including dairy, various proteins, fresh vegetables, fruit, and canned and boxed goods.
If you don’t know what to cook with the groceries provided, what good is the assistance?
That is why volunteers at the St. Vincent de-Paul Food Pantry want to provide recipes to help people use their groceries.
This month it is all about the main course; What protein is quick and easy, tasty and healthy, and can possibly come from the panty?.
Crispy Oven-Baked Fish
May use Catfish, Tilapia, Cod, Halibut or Haddock
1 egg
1 tsp water
1/3 cup Italian bread crumbs
1/2 tsp garlic salt and lemon-pepper seasoning
2 fish, 3 to 4 oz each
cooking spray
lemon wedges, optional
Heat oven to 400. Line cookie sheet with foil; generously spray foil with cooking spray. In shallow bowl, beat egg and water until well blended. In another bowl, mix bread crumbs, lemon pepper seasoning, and garlic salt. Dip fish into egg mixture; coat with bread crumb mixture. Place on cookie sheet. Spray fish with cooking spray. Bake 10 minutes. Turn fillets; bake 5 to 10 minutes longer or until fish flakes easily with a fork. Place fillets on a platter with lemon wedges.
Garlic Butter Cod
1 T. olive oil
5 small codfish fillets
1 tsp garlic powder
1/4 tsp paprika
salt and pepper to taste
3 T. butter
1 T. garlic clove, minced
1 tsp lemon zest, optional
In a large skillet, heat olive oil over medium-high heat. Pat the fish dry with a paper towel and seal with garlic powder, onion powder, paprika and salt, and pepper. Place the codfish in a large skillet and turn the heat to medium. Sear fish for 3 to 4 minutes. Flip the fillets over and cook the other side for 3 to 4 minutes. Add butter when it melts; add garlic and lemon zest. Cook for 1 minute. Remove fish from pan and plate.
Tuna Loaf
Drain 1 can of tuna fish mix with 1 can of celery soup. Slightly beat 2 eggs and mix with tuna and soup. Mix in 1 cup of cracker crumbs. Salt and pepper to taste. Bake for 45 minutes in a loaf pan at 350 degrees.
Oven-Fried Salmon or Tuna Cakes
1 large egg
1 can of salmon or tuna, drained and flaked
1 cup bread crumbs
1/4 cup minced onions
4 T lemon juice
3 tsp Worcestershire sauce
Heat oven to 400 degrees. Spray cookie sheet with cooking spray. Beat egg with a fork in a medium-sized bowl. Add remaining ingredients and mix well. Shape in eight patties. Place on a prepared cookie sheet and bake 10 to 12 minutes, turning once, until golden on both sides. The non-denominational food program helps “all God’s children” and allows families to stretch their food budget. The food pantry works to ensure Clay County families do not go without food.
