Flavorful SUPERFOODS CABBAGE RECIPES
Despite its impressive nutrient content, cabbage is often overlooked. Cabbage is highly nutritious and rich in vitamin C, fiber, and vitamin K. Some research suggests that it may support digestion, improve heart health, and decrease inflammation.
Fried Cabbage
5/6 thick bacon slices, cut into small pieces
1/3 cup onion, finely chopped
1/2 head green cabbage, roughly chopped
salt and pepper to taste.
Cook bacon over medium heat until crisp. Remove the bacon. Add the onion to the same pan as the bacon and cook until translucent. Add cabbage, salt, and pepper, and mix everything. Cook until the cabbage is tender. Add bacon back into the pan and mix. Serve warm.
Cabbage Rolls
Mix: 1 lb ground beef, 1 minced onion, 1 cup of minute rice, 1 egg, salt, and pepper. Remove cabbage leaves, and place in boiling water until softened. Place a roll from the above mixture on the softened cabbage and wrap. Fasten it with a toothpick to hold it in place. Place rolls in a large pan and cover with 2 cans of tomato juice. Bring to a boil and turn on low to finish cooking for about an hour.
Cabbage Pancakes
Dipping Sauce
4 T. sour cream
1 T. soy sauce
1 t. hot sauce, optional
Pancakes
8 oz of pre-shredded cabbage, needs to be finely shredded.
1/2 cup diced onion
1/2 cup flour
4 large eggs
1 T soy sauce
1/4 tsp black pepper
1 T minced garlic
3 T of oil for frying
Prepare dipping sauce. Mix the cabbage, onion, and flour in a large bowl. Whisk together the eggs, soy sauce, pepper, and garlic in a small bowl. Stir the egg mixture into the cabbage mixture and mix well. In a large nonstick skillet over medium-high heat, add 1 1/2 T of oil and brush to coat the skillet. Scoop the mix (the size of an ice cream scoop) onto the skillet, and flatten with a spatula.
Cook the pancakes until browned on both sides, about 3 minutes. Depending on the size of your pan, you may need the extra 1 1/2 T of oil to coat the pan if you can’t get all the pancakes in one pan.
Roasted Cabbage with Garlic and Olive Oil
Olive oil spray
1 large green cabbage
1 tsp kosher salt
1 tsp garlic powder
1/2 tsp red pepper flakes, optional
Preheat oven to 400 degrees.
Line a rimmed baking sheet with foil and generously spray with olive oil. Remove the outer leaves of the cabbage. Cut cabbage in half and then into wedges.
Leave the core in; without it, the wedges will fall apart. Rinse the cabbage wedges, then carefully dry them. Place the wedges in a single layer on the prepared baking sheet.
Generously spray the tops with olive oil. Season with salt, garlic powder, and red pepper flakes. Roast wedges until golden brown and fork-tender, 25 to 30 minutes.
