Cooking "throw back" a quick comfort when using a microwave

When life is crazy (much like doing this blog tonight) and I'm in a hurry to eat something good, I can't help but fix a bowl of smashed potatoes.

The creamy goodness is just pure relaxation in a bowl!

Normally I hate microwaves, but this recipe is just perfect for it.

Wash, dry and poke holes in three or four medium red potatoes.

Not knowing what type of microwave you have at home, I won't tell you settings, just cook them until they are done.

Cut in half, put in bowl and use an old fashioned "potato smasher" to take out the frustration of the day.

Mix in two tablespoons of real butter, a quarter cup of sour cream and salt and pepper to your taste.

(I like a touch of garlic salt, a sprinkle of shredded cheese and some bacon bits to top it off with! YUM!)

Then sit back for a quiet moment and enjoy a cooking "throw back" to the past.

I know after covering a court case all day, I'm ready for a bowl of smashed potatoes.
