Another no-bake cookie recipe that doesn't fail to please

It's happened again. Another reader has requested more no bake cookies recipes to cook during this summer heat.

My grandmother has some different ways to make yummy treats without all the heat an oven makes.

My Papo Lashbrook loved no-bake cookies made with oatmeal, peanut butter and cocoa that he called "clumpsters."

My Grandma Iva called them "Calamity Janes" because if the cookies are not cooked right they will be dry and crumbly or become gooey piles.

In a medium saucepan, combine one and a 3/4-cups of sugar, a 1/2-cup of milk, a 1/2-cup butter, one teaspoon of cinnamon and four tablespoons unsweetened cocoa powder. Bring the mixture to a boil, and cook only for 90 seconds. You have to start timing when the mixture reaches a full rolling boil, which is the trick to successful cookies, or you get the gooey clumps.

Remove the pan from the heat, and then stir in 1/2-cup of crunchy peanut butter, 3 cups of quick-cooking oats, 1-teaspoon of vanilla and 1/4-cup of chocolate chips.

Drop the mixture by teaspoonfuls onto wax paper and let cool on the counter until hardened.

If the mixture didn't harden, my grandmother would roll the "Calamity Janes" into balls and place them in a paper bag containing 1-cup of crispy rice cereal, 1/2-cup of powdered sugar and a teaspoon each of cinnamon and cocoa, then shake until well coated.
