The Blue Bonnet Restaurant, U.S. 40W, should be re-opening in the middle of June.
The Times called owner Sam Stoll at his Evansville restaurant Tuesday. Stoll said the Blue Bonnet was closed in February for remodeling to accommodate a menu change.
About that same time Stoll opened up a restaurant in Evansville. The new business demanded much of Stoll's time and he was unable to give the needed attention to the Brazil restaurant.
When the Blue Bonnet re-opens it will be a self-serve buffet-style eatery. Customers will pay up front then serve themselves at the all-you-can-eat food and drink bar.
"There will be no menu orders," Stoll said, "but the self-serve buffet style will offer more reasonable prices."
A little remodeling is required inside. Also, Stoll plans to redo the sign and the drive before the mid-June re-opening.
