How to make summer fresh broccoli salad

This tasty treat from our "Dining with Diabetes" class is packed with the taste of summer and is good for you too.



* 4 cups broccoli florets,

* 1/4 cup red onion, minced,

* 2 tablespoons Splenda,

* 2 tablespoons cider veingar,

* 3 tablespoons low-fat Mayonnaise,

* 2 tablespoons Sunflower seeds shelled, roasted and salted or your favorite substitute, and

* 3 tablespoons seedless raisins.

Quick and Easy

Chop the broccoli florets and set aside. Place remaining ingredients in a medium-sized mixing bowl. Mix well.

Add broccoli florets and toss until coated. Chill until ready to serve.

Nutrition information per serving: calories 70; sodium 70; total carbs 8 grams; fiber 2 grams; sugars 5 grams; protein 2 grams.

Note: The Splenda, cider, mayonnaise dressing is a versatile one that reminds me of my mother's favorite all-purpose salad dressing -- without some of the calorie and sugar liabilities. This is a popular salad to add bacon bits to, if that sounds good to you.
