Eddie’s Reopening to Sell Tiny Burgers

A Brazil institution is set to reopen, as Eddie’s Sandwich Shoppe expects to sell tiny hamburgers again starting June 1.

The family operated business will use the same menu the Knierim family served in 1991.

Brad Wallace was still working to finish ceiling repairs over the counter and wall repairs Monday, in the same spot where a car drove into the Eddie’s building a few years ago.

Wallace has leased the operation for his daughter, Brylee Wallace, who will run it. Brian Wilson remains the owner.

“I remember coming as a little, little kid, with my grandfather,” Brad Wallace said, “and dreaming of operating it.”

Eddie’s opened in 1931, but has sat empty for about 2 and a half years, after closing due to the economic effect of the pandemic.

Brylee, a recent high school graduate, now 18, has the opportunity to realize her dream, and all the hard work that goes into running a restaurant.

She worked at Eddie’s when she was 15, and since has worked at Big Willy’s Lakehouse for owner Jason Trainor.

Now, her working hours will be 4 p.m. to close at the Lakehouse, Thursdays through Sundays, and 6 a.m.-2 p.m. at Eddie’s on Monday through Saturday.

His sons, Colton, 19, and Aden, 16, will also work at the restaurant.

“From 5-3, I’ll know exactly where they’re at,” he said of the three teenagers.

He expects to advertise the opening day soon.

Wallace expects he might need to help out the first few weeks, but that his three kids will be on their own from there. The Wallaces are making a few changes compared with a couple of years ago.

They are cutting fried foods from the menu, by going back to the 1991 version, and focusing on grilled foods. Fountain drinks and canned soda are both on the menu, and the burgers will remain the same.

They will use the same recipes, with thin sliced pickles and dehydrated onions. The circular burgers are three inches wide, and still 1/10 of a pound of meat.

They will start with the original bar stools at the counter, but he expects to eventually increase seating to 32 people. Plenty of interest has picked up around the opening.

“We had 1,538 Facebook followers in the first 24 hours,” Wallace said.

The restaurant is still pending inspection, with the expectation that food delivery will be today.

Customers can park in the Riddell National Bank parking lot directly to the left of Eddie’s.
